Grown-Up Ants on a Log

Ants on a log are the quintessential American snack for kids. At least that’s how I felt when I was a kid. Cut up celery filled with creamy peanut butter and topped off with adorable little raisin ants. Not only are they cute to look at, but they’re tasty too.
Years ago, when I became a dietetic intern and started moving through my practical nutrition rotations, I figured that bringing such a juvenile snack would probably only serve to mark me as a juvenile to my preceptors and their colleagues. So I decided to elevate it. That’s how my grown-up version of ants on a log came to be. Hope you enjoy them as much as me!
P.S. The ants on a log pictured above are topped with fresh fruit not dried. I used mango and blueberries..mmm.
