This chicken fajita skillet happened by accident one day in my kitchen. My husband bought an enormous tub of salsa and I didn't know what to do with all of it after we ate what we could! So I decided to cook up some fajita chicken and veggies, let it all simmer in the salsa and finished it off in the oven with some bubbly cheese on top. Oh my, was this a winner.
I had to share on the blog because I really love a flavourful dish that doesn't take long to put together. This one was fun to make and lasted until the next day for lunches. Love that.
