Chickpeas are one of the most versatile legumes. They can be blended, processed, boiled, roasted, deep-fried and even added to dessert! Chickpeas are a great source of fibre and protein as well as some wonderful micronutrients like folate and iron.
Aside from being so versatile, they’re delicious! South Asian and Middle Eastern cuisines serve up some of the most delicious recipes using chickpeas. Today’s recipe, however, is a twist on a North American classic - Egg salad. It’s packed with flavour, quick to prepare and always a hit at potlucks and picnics!
A quick note: Chickpeas can be purchased both dry and canned. Nutritionally, both are considered a healthy and nutritious choice. Just be sure to rinse your canned chickpeas to rid them of excess sodium. Enjoy!
